When to use 'fish' and 'fishes'?

What's the difference between the two?

You use 'fish' when they are of the same type, e.g. "sardines are one of the most common fish dishes"; and 'fishes' when they are of different types, e.g. "amongst the fishes in the sea were haddock, tilapia and herring"
